Tomato Salad with Lemon & Mint

This salad is a quick and easy side dish, fantastic with lamb or halloumi. You can bulk it out with salad leaves, cheese, croutons etc. for a light lunch, or enjoy it as a side dish for your main.


 

Ingredients


1 pack of piccolo tomatoes (or any sweet cherry tomato variety)

2 tbsp chopped mint

4 tbsp olive oil 

2 tbsp lemon juice

salt and pepper


Method


1. Slice the tomatoes into halves or quarters.

2. Whisk the oil and lemon juice in a bowl until combined, add the seasoning and chopped mint, then add to the tomatoes and mix.
