Straight off the BBC Good Food website, this recipe is amazing! I like to make things my own, but this doesn't need anything changing.
Once you learn how to make your own custard it's a real game changer. It's so much easier than you would expect and infinitely better than the tinned stuff. Once you make your own, you wonder how they get it to be such an unnatural yellow and realise what it should really look like!
Ingredients
200ml double cream
700ml whole milk
4 large egg yolks
3 tbsp cornflour
100g caster sugar
1 tsp vanilla extract
Method
1. Add the cream and milk to a large saucepan and gently heat until just below boiling point. In a separate bowl, whisk the egg yolks, cornflour, caster sugar and vanilla until combined. Once the milk mixture is hot, pour into the bowl and whisk all ingredients together.
2. Return the mixture to the saucepan and heat gently, constantly stirring. The custard is ready once it reaches your desired thickness. Don't be tempted to leave it unattended as this is how you get lumpy custard!
