This tomato sauce is one of the first things I ever learned to make. I remember making pizzas in school in a food tech class and being the only one who made their own sauce (it's hardly learning to cook if you're just adding a jar of sauce to a shop-bought pizza base!) This must have been over 15 years ago (blimey...) so it's had plenty of time to be honed, but there's really not much that needs changing in a simple tomato sauce recipe - if you use good quality ingredients they do the work for you!
It's super simple and incredibly yummy. Plus it's so much better than shop bought tomato sauce and doesn't contain the unnecessary sugar content that these usually have. It's the perfect base for pasta or pizza and freezes well, so you can make a large batch ahead of time.
Fresh herbs are almost always better than using dried, but it still tastes great if that's what you have.
Ingredients
1tbsp good quality olive oil 1 red onion, very finely chopped 3 cloves garlic, minced 800g passatta 1tbsp fresh oregano, chopped (or 2tsp dried) 1tbsp fresh basil, chopped (or 2tsp dried) salt and pepper Method 1. Fry the onion in olive oil until soft, add the garlic and fry for another couple of minutes. 2. Add the passatta, herbs and seasoning. Cover and simmer on a low heat for about 20 minutes until the sauce has thickened. Taste and adjust seasoning if necessary.
