Is there anything better than a crispy bit of potato? Please do share if you can think of anything.
This is a totally fab side for almost any main! You can mix up the herbs or spices you use if you want to give it a little extra oomph or pair it with the rest of your dish. For this, I've kept it simple with plenty of seasoning and a bit or dried oregano.
By par boiling the potatoes first and then lightly smashing before roasting you get loads of gorgeous crispy bits - the more crispy bits the better! Especially as I tend to eat these as I'm serving them, so nobody gets quite as many as they should...

Ingredients
500g baby new potatoes
2tsp dried oregano
sunflower oil
salt and pepper
Method
1. Pre-heat oven to 200c. Cut the baby potatoes into 2-3 chunks and boil for 10 minutes until softened slightly. Drain the potatoes once cooked and place in a separate roasting tin, season with salt, pepper and oregano, toss with sunflower oil, then smash slightly with a fork or potato masher. Roast the potatoes for 20-25 minutes until crispy.
