Apple Crumble Muffins

I cannot tell you how insanely delicious these are! I ate two immediately while they were still warm and the rest disappeared not long after! I was originally planning to make a healthy breakfast muffin, but to be honest, I quite like my muffins sugary (not that I didn't eat these for breakfast anyway...) Now I will be testing some muffin recipes that don't have any refined sugar, so will be a more balanced start to the day, but in the meantime enjoy these scrumptious muffins with all of the tasty spices and sweetness of apple crumble. And hey, if you want to whack a bit of custard on them I fully support you.


For this recipe I adapted my favourite carrot cake recipe, essentially swapping out the carrot for apple. The oil based mix (rather than butter) guarantees a gorgeous moist sponge that will stay moist for days (if you can resist eating them all in one sitting).


I would usually use cooking apples for something like this, but I had a couple of braeburns to hand which worked really well.


 

Ingredients 175g light brown soft sugar 175ml vegetable or sunflower oil 3 large eggs 1/2 tsp vanilla extract 140g grated apple (approx. two medium apples) 150g self-raising flour 25g ground almonds (if you don't have this, just add another 25g of flour) 1 tsp baking powder 1 tsp cinnamon 1/2 tsp nutmeg 100g sultanas For the crumble topping: 5 tbsp plain flour 2 tbsp caster sugar 50g cold butter

Method

1. Preheat the oven to 180C.

2. In a large mixing bowl, stir the sugar, oil, eggs and vanilla until combined. Mix through the grated apple.

3. Add the dry ingredients and mix until thoroughly combined. Stir through the sultanas.

4. In a separate bowl make the crumble topping - combine the flour and caster sugar. Cut or grate the cold butter and rub through the flour/sugar mix until it resembles bread crumbs. You can do this in a food processor or by hand.

5. Spoon the muffin mix evenly into 12 muffin cases. Add a sprinkling of crumble to the top of each muffin.

6. Bake for 25 - 30 minutes or until a skewer inserted into the middle comes out clean.
